Our slow-dried sausage (4 to 6 weeks) develops its natural bloom—the hallmark of authentic artisanal cured meat. This gray-green fine layer on the sausage casing is an edible mold, similar to those found on cheeses like Roquefort. Please note, this product undergoes drying.
